Put Your Best Butt Forward
with
Slow Cooker Root Beer Pulled Pork - by Joanne Kidd

Okay, I don’t personally eat red meat or pork, but the rest
of my family enjoys it, so this is a recipe I use for my
merry band of pulled pork lovers. I usually like to cook
enough to be able to put some aside for freezing because
that gives me a dinner-cooking pass to redeem at whim.
In picking out a pork roast, I like to get a 5 to 6 lb cut of
meat. Some butchers call this cut a “shoulder roast” and some
call it a “butt roast.”
If one this size isn’t available in the meat case, I ring
the bell and get to ask the butcher for a big butt.
Seriously… That’s really fun, and there are two ways of
doing this! Option A: “I'm looking for a big butt.” or
Option B: “Do you have a big butt?” (After trying
option B, though – you’ll probably need to find another
butcher.)
Okay, here's all you’ll need:
1 5 - 6 lb pork shoulder / butt roast
1/2 tbsp dried minced onion
1/2 tsp each salt and pepper
16 oz Root Beer
1 18 oz bottle of Sweet Baby Ray’s Honey BBQ Sauce
Now, we’re gonna cook some butt. Start by
trimming the fat and toning the butt. (Disclaimer: Skechers do not work for this.)
Next, place butt in
slow cooker. (Do I need to spell this out, or is somebody
going to get their behind stuck in the slow cooker?)
Season with salt, pepper, and 1/2 tablespoon dried minced
onions, then add root beer to slow cooker and cover and lock down
the lid.
Cook on low for 10 hours
After the meat is cooked, drain out all of the root beer and
other liquid, and with a fork in each hand, pull
the meat apart. Keep pulling and pulling until all the meat
is shredded. Don’t forget to remove the bone when you find
it.
Add in the barbeque sauce and stir into the shredded meat.
You can keep this on
warm in the slow cooker until served. (As long as that’s
within the next hour or so.)
Now
you'll need to decide how you're going to serve this. It's
great for sandwiches, on a bun or Hawaiian roll (Yum! I love
those!), or just as a clump of meat next to some red garlic
mashed potatoes.
